Get ready for a culinary journey with Ravneet Gill and Mattie Taiano, as they share their unique approach to hosting a Friendmas feast!
A Taste of Home and Heart
Ravneet Gill, a talented pastry chef, reminisces about the vibrant dinner parties at Mattie's mum's house, where an open-door policy welcomed guests to indulge in delicious home-cooked meals. This warm and inviting atmosphere inspired the couple's restaurant, Gina, located in Chingford, east London. Named after Taiano's late mother, Gina embodies the essence of a neighborhood joint, with a menu that reflects the couple's diverse cultural backgrounds and love for sharing meals.
A Cultural Fusion
Gill, who grew up in an Indian family, and Taiano, of Italian and Jewish descent, share a deep connection through their cultures' emphasis on food and communal dining. Gill recalls, "Our cultures are both very much about food and being around the table." From afternoon snacks like samosas and pakoras to full-blown curries and rotis in the evening, their childhood meals were a celebration of flavors.
Accidental Entertainers
Despite their natural hosting skills, Gill and Taiano's dinner parties often happen spontaneously. "We just gather a group of friends through various conversations, and they end up at our flat," Gill explains. With chefs as friends, it's a definite perk to enjoy delicious spreads without any formal planning!
A Warm Welcome
So, what's it like to dine at Gill and Taiano's? Gill insists on a cozy atmosphere, starting with taking off your shoes and bringing a bottle (as they don't drink). The couple encourages guests to bring "deli things" to enjoy after the meal. Gill adds, "We always make a nice table and get a playlist on." And don't be late - the food will be ready and waiting!
Sharing is Caring
Think sharing bowls of perfectly cooked pastas (Taiano warns, "You've got to do it well!") or a nice joint of meat with dauphinoise potatoes. Taiano suggests, "Just something slow-cooked that you can forget about." Their braised lamb shoulder recipe (included below) is a perfect example of this comforting dish.
A Sweet Finale
When it comes to dessert, Gill, a judge on Junior Bake Off, takes charge. She recommends a big sharing dessert, like a choux tower, sticky toffee pudding, or a toffee apple self-saucing pudding. "They're easy, and everybody loves that," she says.
A Balancing Act
While hosting guests regularly brought joy, it also presented challenges. Gill, a self-confessed cleaning obsessive, often faced a three-day cleanup after Taiano's incredible feasts. The arrival of their son, Donnie, added another layer, as they now navigate hosting in a one-bed flat, mindful of not disturbing their little one's sleep.
Hospitality at Gina
Their entertaining itch found a new outlet at Gina, their restaurant. "We thought having a restaurant would be easier," Gill laughs. However, their generosity has impacted their profits, as they often comp guests, getting into trouble last month with an oversized comp bill. "It's in our nature to be hospitable," Gill explains.
A Tasty Treat at Home
As told to Anna Berrill, Gill shares a glimpse into their home fridge, revealing a box of Ferrero Rocher, milk, rhubarb jam, a sourdough starter, and Pierre Marcolini chocolates. It's a testament to their busy lives, with little time for home cooking since the restaurant opened.
Braised Lamb Shoulder and Dauphinoise
This hearty dish is perfect for a cozy winter meal. The lamb shoulder, braised to perfection, is accompanied by a side of creamy dauphinoise potatoes. The recipe includes detailed instructions and tips for making it ahead and reheating, ensuring a stress-free cooking experience.
Brown Sugar Meringues with Coffee Cream and Cherries
For a sweet ending, these meringues with a coffee twist are a delightful treat. The recipe includes instructions for making large meringues, a coffee-infused cream, and a topping of cherries and grated chocolate. A perfect way to impress your guests!
