"My partner's love language is bread! They grew up with traditional Irish breads, but the gluten-free options available were just not up to par. So, I decided to take matters into my own hands and create something delicious and safe for them to enjoy," Laura shared.

Laura's first attempts at gluten-free bread were not successful, but her persistence paid off. She eventually mastered the art of gluten-free baking, supplying wholefood and health shops with her bread and later expanding into pastries and cakes. The demand for her creations grew, leading her to open her own facility in Gungahlin.

"Having my own space has been a game-changer. I can now ensure a completely gluten-free environment, which is crucial for those with coeliac disease. Plus, it allows me to be more creative and flexible with my recipes," Laura explained.

The bakery's new location has not only allowed Laura to expand her product range but also to open as a cafe on Saturdays. The response has been overwhelming, with customers lining up to experience the unique, safe, and delicious treats on offer. "I want Freed.me to be a place where everyone can enjoy their favorite treats without worry. It's about creating a community and providing an experience that goes beyond just food," she added.
