A Labor of Love
Freed.me Gluten Free Artisan Bakery, a gem in Canberra's culinary scene, was born out of love and a desire to cater to gluten-free diets. Laura, originally from Colombia, met her partner, also named Laura, in Canberra in 2024. Her partner's Irish heritage and love for bread, coupled with their gluten intolerance, inspired Laura to embark on a gluten-free baking journey.
"My partner's love language is bread! They grew up with traditional Irish breads, but the gluten-free options available were just not up to par. So, I decided to take matters into my own hands and create something delicious and safe for them to enjoy," Laura shared.
The Road to Success
Laura's first attempts at gluten-free bread were not successful, but her persistence paid off. She eventually mastered the art of gluten-free baking, supplying wholefood and health shops with her bread and later expanding into pastries and cakes. The demand for her creations grew, leading her to open her own facility in Gungahlin.
"Having my own space has been a game-changer. I can now ensure a completely gluten-free environment, which is crucial for those with coeliac disease. Plus, it allows me to be more creative and flexible with my recipes," Laura explained.
A Safe Haven for Gluten-Free Indulgence
The bakery's new location has not only allowed Laura to expand her product range but also to open as a cafe on Saturdays. The response has been overwhelming, with customers lining up to experience the unique, safe, and delicious treats on offer. Laura's vision extends beyond just gluten-free; she also caters to dairy-free, nut-free, and vegan diets, making her bakery an inclusive haven for all.
"I want Freed.me to be a place where everyone can enjoy their favorite treats without worry. It's about creating a community and providing an experience that goes beyond just food," she added.
The Science Behind the Success
Creating exceptional gluten-free breads and pastries requires a deep understanding of the baking process. Laura utilizes various flours, such as corn, buckwheat, and tapioca, to achieve the desired textures. Her success lies in her ability to master the science behind gluten-free baking.
"It's a delicate balance, but once you understand the chemistry, you can create truly amazing things. The cinnamon scrolls, for example, are a hit because they're so hard to find in gluten-free form, and our customers love them!"
A Bright Future
For now, Laura is focused on perfecting her recipes and increasing supply to meet the demand of her loyal Saturday customers. She hopes to expand her opening hours to Sundays soon and plans to bring her gluten-free delights to the south side of Canberra in the future. Her breads are already available at select stores, but her ultimate goal is to create a safe and enjoyable space for all.
"I'm grateful for the support we've received so far. It's a dream come true to be able to share my passion and provide a service that makes a difference in people's lives. I can't wait to see where this journey takes us!"
